  • Chicken breast
  • Mushrooms
  • White wine
  • Heavy cream
  • Cherry tomatoes
  • Garlic
  • Olive oil
  • Parmesan cheese
  • Pasta (your choice)
  • Fresh parsley
  • Salt and pepper

Instructions:

  1. Cook your choice of pasta according to package instructions.
  2. Slice chicken breasts into 1-inch pieces and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on both sides. Remove chicken from skillet and set aside.
  4. Add sliced mushrooms, cherry tomatoes, and minced garlic to skillet. Cook until mushrooms are softened and tomatoes have burst, about 5 minutes.
  5. Pour white wine into skillet and scrape the bottom of the skillet to release any brown bits. Cook until liquid has reduced by half, about 5 minutes.
  6. Add heavy cream and grated Parmesan cheese to skillet. Stir to combine and let simmer until sauce has thickened, about 5-10 minutes.
  7. Return chicken to skillet and stir until chicken is coated in the sauce and fully cooked through.
  8. Plate pasta and pour sauce over cooked pasta. Top with chopped fresh parsley and a sprinkle of Parmesan cheese. Serve hot and enjoy!
