Ingredients:

  • 1 lb spaghetti
  • 1 lb shrimp, peeled and deveined
  • 2 red bell peppers, roasted and chopped
  • 1/2 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Cook spaghetti according to package instructions, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant and softened. Add the roasted red peppers and cook for an additional 2-3 minutes.
