Chicken Spinach Alfredo Pasta

Ingredients

  • 8 oz fettuccine pasta
  • 1 lb boneless skinless chicken breasts, thinly sliced
  • 2 tsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup chopped spinach
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta according to the package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  3. Heat butter in the same skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  4. Add heavy cream and bring to a simmer. Reduce heat and cook for 2-3 minutes.
  5. Add parmesan cheese and stir until melted and smooth.
  6. Add chopped spinach and cooked chicken to the skillet. Stir until combined and spinach is wilted.
  7. Add cooked pasta to the skillet and toss to coat.
  8. Season with salt and pepper, to taste.

  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • 1/2 cup chopped fresh basil
  • 1/2 cup chopped fresh parsley
  • Salt and pepper, to taste
  • 2 cups chopped cooked chicken
  • 2 cups chopped spinach
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F.
  2. Cook the pasta according to the package directions. Drain and set aside.
  3. In a large saucepan, heat heavy cream until it begins to simmer. Add parmesan cheese and stir until melted and smooth.
  4. Stir in basil, parsley, salt, and pepper.
  5. Add chopped chicken, spinach, and cooked pasta, and stir until everything is evenly coated.
  6. Spoon the mixture into a 9x13-inch baking dish. Sprinkle shredded mozzarella cheese over the top.
  7. Bake for 20-25 minutes or until cheese is melted and bubbling.
