Y'all, i just found the most delicious-looking recipes for some of the fanciest seafood dishes i've ever seen. These pics got me feeling some kind of way, so i'm about to tell you all about them.

Prosciutto-Wrapped Shrimp, Pesto Risotto + Roasted Red Pepper Sauce

Y'all, just the title of this dish makes me feel all kinds of fancy. This ain't your grandma's shrimp and grits, honey. This dish has got layers, and i ain't just talking about the prosciutto wrapped around them shrimp. The recipe calls for a pesto risotto and roasted red pepper sauce to top it all off. I ain't never even heard of a pesto risotto before, but it sounds like something i could get used to.

Now, i ain't no chef, but the ingredients list seems pretty reasonable. Ain't nothin' on there i can't find at the grocery store. And the instructions don't seem too complicated either. They say to sauté the shrimp, wrap them in prosciutto (fancy!), make the risotto, and blend up the roasted red pepper sauce. Sounds easy enough to me.

This dish is for all y'all who like your seafood with a little bit of spice. The recipe calls for a roasted red pepper cream sauce, which i assume is what gives it that kick. The shrimp themselves look plump and juicy, and they're served over some kind of pasta that i can't identify- but i ain't mad about it.

Now, this recipe does have a few extra ingredients that the other one didn't have. Stuff like shallots and garlic and shallots. I ain't really sure what shallots are, but according to Google, they're like an onion's fancy cousin. And the recipe says to use white wine. Now, i like a good moscato as much as the next person, but i ain't never cooked with it before. But hey, i'm always up for trying new things.

All in all, these recipes look like some good eatin'. I might have to try them out on a special occasion or something. If y'all decide to try them, let me know how they turn out!
