  • 1 pound penne pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound andouille sausage, sliced
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped parsley, for garnish (optional)

Instructions:

  1. Bring a large pot of salted water to a boil over high heat. Add the penne pasta and cook until al dente, according to package directions. Drain and set aside.
  2. In a large, deep skillet or Dutch oven, heat 1 tablespoon of oil over medium-high heat. Add the chicken and cook until browned on all sides, about 7-8 minutes. Remove the chicken from the skillet and set aside.
  3. Add another tablespoon of oil to the skillet. Add the sliced andouille sausage and cook until browned, about 5-6 minutes. Remove the sausage from the skillet and set aside.
  4. Add the garlic, onion, and bell peppers to the skillet. Cook until the vegetables are soft, stirring occasionally, about 5 minutes.
  5. Add the chicken broth, heavy cream, Cajun seasoning, salt, and black pepper to the skillet. Stir to combine.
  6. Bring the mixture to a simmer and let it cook until thick and bubbly, stirring occasionally, about 10-12 minutes.
  7. Add the cooked penne pasta to the skillet and stir to combine with the sauce. Let it cook for another 2-3 minutes, until the pasta and sauce are heated through.
  8. Transfer the pasta to a serving dish and top with the cooked chicken and andouille sausage. Garnish with chopped parsley, if desired.
