Shrimp Pasta with Roasted Red Peppers and Artichokes Recipe
Ingredients
- 1 pound linguine pasta
- 1 pound medium shrimp, peeled and deveined
- 1 can artichoke hearts, drained and rinsed
- 1 red bell pepper, sliced
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup parmesan cheese, grated
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the linguine pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the sliced red bell pepper and cook until tender, stirring occasionally for about 5 minutes. Add the garlic and sun-dried tomatoes and cook for an additional minute.
- Add the shrimp to the skillet and cook until pink, about 3-4 minutes.
- Pour in the chicken broth and heavy cream. Add salt and pepper to taste, and bring the mixture to a simmer. Stir in the parmesan cheese until it's melted and fully incorporated.
- Add the cooked linguine to the skillet and toss until the pasta is fully coated in the sauce.
- Drain the artichoke hearts and add them to the skillet. Cook for an additional minute or two until everything is heated through.
- Garnish with fresh parsley and serve hot.
