- 1 spaghetti squash, halved and seeded

- 1/2 red pepper, chopped
- 3 cloves garlic, minced
- 1 lb ground turkey
- 1 can of diced tomatoes, undrained
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella cheese
Instructions:
- Preheat your oven to 375°F.
- Place the spaghetti squash halves cut-side-down on a lined baking sheet and bake for 35-40 minutes, or until tender.
- Use a fork to scrape the squash into a bowl. Set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the onion, red pepper, and garlic and sauté until tender, about 4-5 minutes.
- Add the ground turkey to the skillet and cook until browned, breaking up the meat with a spatula as it cooks, about 5-7 minutes.
- Add the diced tomatoes, Italian seasoning, salt, and black pepper. Bring to a simmer and cook for 5 minutes.
- In a 9x13 inch baking dish, spread half of the spaghetti squash on the bottom. Top with half of the ground turkey mixture. Repeat with the remaining squash and turkey mixture.
- Sprinkle the mozzarella cheese evenly over the top of the casserole.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Serve immediately and enjoy!
